Chicken Cutlet...

Ingredients

Bone less chicken or Chicken Khima 1/2 kg

Cooked aloo (potato) 5 -6
Chopped tomatoes 2
Chopped onions 3
Chopped green chillies 10
Red chilli powder 1 1/2 tsp
Ginger garlic paste 2 tsp
Chopped coriander leaves 1 bunch
Chopped curry leaves 10
Turmaric 1/4 tsp
Egg 3
Bread crums or rusk powder
Salt
Garam Masala powder 1 1/2 tsp
Oil to fry and cook.
Ghee can also be used for frying.

Method

Heat 3 tsp of oil in a pan .

Add onions and green chillies , fry them for a while.
Then add tomatoes, ginger garlic paste and salt.
Add Chicken pieces or the khima and turmaric ,fry for a while.
Cook the chicken well then add coriander leaves , curry leaves.
Cook untill the water completely evoporates.
Then add mashed aloo and fry for a while.
When the water completely dries out, remove from the flame.
When it cools down add the egg yolk(yellow part)and mix well.
If you are using bone less chicken grind coarsly in the mixer.
If you are using khima no need to grind.
Do not grind it finely, it leaves water.
Beat the egg wite untill you get froth.
Make the chicken mixture into small balls and press them flat(can give any shapes to the cutlet).
Dip in the egg white and on the bread crumbs.(can be frozen and fried when required)
Put 2 tsp of ghee or oil on a flat pan and roast the cutlets on both sides.
