Ingredients

Lemon Nimbehannu 500gms

Jaggery 250 gms
Oil 100gms
Vinegar 2 cups
Red chilli powder 2 tsp
Green chillies slit 8-10
Garam masala powder 1 tsp
Mustard powder 1 tsp
Seseme seeds powder 1 tsp
Ginger garlic paste 1 tsp
Methi powder 1 tsp
Salt
Asefotida (ingu)


Method

Wash lemon and dry them with clean cloth . Cut lemon into 4 parts .Keep it in a airtight container , add salt and allow it to soak in salt for 10 days.

Heat oil in a pan then add mustard seeds , jeera and ingu (seasoning).Then add ginger garlic paste and fry for a while.
Add this to the lemons and add the remainng masalas to the lemon.
Then add slit green chillies and mix well.
Grate jaggery and boil in vinegar,allow it to cool and sieve in a clean cloth and mix it well.
Wait untill 5-6 days and then it can be used .
